In 2020, due to frequent autumn rains, the ripening of the olives has been relatively late. Castillo de Monteagudo harvested its olive groves on the morning of November 16th, a cloudy day with temperatures between 7°C and 15°C. Therefore the olives arrived at the mill very fresh and they were cold pressed without the need for further refrigeration.
The result was an oil with an intense aroma of fresh grass, fruit and banana, with some touches of almond. Local vegetables such as tomatoes and artichokes can be detected.
In the mouth it is an elegant and silky oil. Very balanced, sweet and slightly spicy. Medium persistence.
It is an oil that stands out for its smoothness and balance and is ideal to accompany delicate dishes such as vegetables or fish; or to be taken simply with some toast and tomato. Due to its sweetness, it is also very suitable for use in pastries, as a complement or substitute for butter.
