Recipe for cookies with dark chocolate chips

Ingredients:

  • 3/4 cup of our Castillo de Monteagudo EVOO
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 small teaspoon of baking soda
  • a pinch of salt
  • 1 small teaspoon vanilla extract
  • 2 cups flour
  • 1 cup of dark chocolate in chips or pieces

Instructions:

  • In a bowl, mix the oil and sugars until you obtain a homogeneous mixture.
  • Add the eggs, baking soda, salt and vanilla extract, mixing well.
  • Add the flour little by little while stirring to avoid lumps.
  • Add the chocolate chips and mix to distribute evenly.
  • Refrigerate the dough for 10-15 minutes while you preheat the oven to 175º C.
  • Form balls the size of a ping pong ball and place them on baking paper, making sure to separate them.
  • Add a touch of Maldon salt on top of each cookie.
  • Bake for 12 to 15 minutes, depending on whether you prefer them to be more tender or crispy.
